The Party Brie


 

Kenny’s advice is to take the brie out before it caramelises, but if you catch a glimpse of it, it comes out really dark brown. We think this could be because it’s wrapped in puff pastry or brioche - which is a Julia Child’s recipe (his favourite). We’ve opted for puff pastry in this version, much less complicated!

 

Method

  • Preheat oven to 180ºC fan

  • Take your puff pastry sheet and roll out so it’s approx. 1/2cm thick

  • Place the brie inside the pastry

  • Cut the pastry into a large circle around the cheese

  • If you are planning on adding any cranberry sauce, walnuts or honey, then this is the time to add it.

  • Spread the cranberry sauce, drizzle the honey or/and scatter the walnuts

  • Start with folding one corner of the pastry, and secure with egg wash

  • Continue systematically folding and securing corners, until the pastry is completely wrapping the brie (in a nice pattern)

  • Finish with egg wash all over the top of the pastry

  • Score the surface of the pastry to allow air to vent

  • Bake for around 30 minutes, until it’s a lovely brown colour.

  • Remember to not let it caramelise! (even though that sounds delicious)
