The Party Brie
Kenny’s advice is to take the brie out before it caramelises, but if you catch a glimpse of it, it comes out really dark brown. We think this could be because it’s wrapped in puff pastry or brioche - which is a Julia Child’s recipe (his favourite). We’ve opted for puff pastry in this version, much less complicated!
Method
Preheat oven to 180ºC fan
Take your puff pastry sheet and roll out so it’s approx. 1/2cm thick
Place the brie inside the pastry
Cut the pastry into a large circle around the cheese
If you are planning on adding any cranberry sauce, walnuts or honey, then this is the time to add it.
Spread the cranberry sauce, drizzle the honey or/and scatter the walnuts
Start with folding one corner of the pastry, and secure with egg wash
Continue systematically folding and securing corners, until the pastry is completely wrapping the brie (in a nice pattern)
Finish with egg wash all over the top of the pastry
Score the surface of the pastry to allow air to vent
Bake for around 30 minutes, until it’s a lovely brown colour.
Remember to not let it caramelise! (even though that sounds delicious)
