Kenny’s Belgian Waffles

Method

  • Heat up the waffle iron in advance

  • In the biggest mixing bowl, whisk together the flour, baking powder, salt, sugar and bicarbonate of soda

  • Using the second bowl beat two egg whites until stiff peaks are forming

  • For the third bowl you’ll need to mix the 2 egg yolks until light and fluffy

  • Add the buttermilk and melted butter

  • Fold the wet ingredients into the first bowl of dry ingredients

  • Once mixed, fold in the egg whites as delicately as you can

  • Pour the mixture into the hot waffle iron, not completely to the edges so it doesn’t drip

  • Bake according to the waffle iron’s instructions, normally 2-3 mins each

  • Serve with chopped fruit, squirty cream and chocolate sauce

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

  • 1 tbsp caster sugar

  • 1/4 tsp bicarbonate of soda

  • 2 eggs, with yolk separated

  • 280g buttermilk

  • 85g butter, melted
